Winter always has me digging out my family recipe books and heading straight to our comfort food favourites like chili, soups and stews. While slow cooked, savoury foods can’t be beat when the weather turns chilly they are infinitely better with the addition of ooey-gooey, melted cheese. From topping our chili with a little sharp cheddar, or mixing in a few cubes of marble into our pasta sauce, there is just something so good about topping everything with a little cheese.
Last month Armstrong sent me a comfort food kit and asked me to check out their great comfort food recipes. Since tomato soup with grilled cheese sandwiches is one of our family’s favourite comfort food meals I decided to try their twist on it. I’m happy to report that Tomato Basil Soup with Mini Grilled Cheddar Bacon Croutons was a hit! It’s so easy to make too! Good bye condensed, hello homemade tomato soup.

To make the Cheddar Bacon Croutons you will need the following:
- ¼ cup (60 ml) salted butter, softened
- 16 slices whole wheat baguette
- 4 oz (125 g) Armstrong Old Cheddar Cheese, sliced
- 8 pieces cooked bacon, halved
Butter the outside of each baguette slice. Layering inside the sandwich 1 slice of Armstrong Old Cheddar cheese, 1 slice of bacon and an additional slice of cheese. Fry sandwiches slowly in a pan over low-medium heat until golden brown and cheese is melted. *TIP – tongs make turning the little grilled cheese sandwiches so much easier.
These little grilled cheese are so good so make many.
Armstrong cheese is the perfect addition to new recipes or for reinventing old favourites. With dishes like Chicken, Broccoli + Cheddar Pot Pies and Apple + Cheese Crescent Rolls, there are plenty of ways to add cheese to your family meals this winter.
