Ham and Carrot Asian Noodles #DinnerIn15

With school almost back in session and busier than ever after school schedules, being able to get dinner ready and on the table in 15 minutes or less has become that much more important. There is always that balance between what my kids will eat and enjoy, and what is healthy. This dish is a happy compromise. I’ve upped the nutritional value by adding ham and carrots to noodles that my kids love, but that aren’t know for their nutritional value. Serve it with fresh veggies and it makes a great, quick, last minute meal, and one my kids love!


What you’ll need:

  • 1 package of instant noodles
  • 2 Tablespoons Sesame Oil
  • Powdered Beef Broth
  • 1-2 Cups Water
  • 2 Large Carrots Grated
  • 1 medium onion
  • 1 package Schneiders Olde Fashioned Ham Steak
  • Water for cooking noodles

Bring a pot of water to a boil and cook noodles until they are mostly cooked. 1-2 minutes. Drain and set aside, reserving 1 – 1.5 cups of water from pot. While the noodles are cooking grate the carrots and chop up the onions into strips by cutting the onion in half and then thinly slicing. This step can be done the night before to save time. Add 1 tablespoon of sesame oil to a large pan, add onions and carrots and cook 5-7 minutes or until they are soft. Add in cooked noodles. Toss everything together using tongs. Drizzle 1 tablespoon of Sesame oil then sprinkle the powdered beef broth over top of the noodle mixture. Toss everything again. Add reserved water to pan, cover and steam 1-2 minutes more until noodles are fully cooked.

Serve with fresh chopped veggies on the side or on its own.
