Pure Via Stevia – Blue Berry Muffin Recipe and Review

I am a diet procrastinator, there I said it. I like following new trends in diet and exercise, even if my waistline doesn’t always show it. It’s the chips fault I swear, and maybe the copious amounts of chocolate I have been given as gifts. It would be rude not to eat them right? That doesn’t mean that I don’t make long-lasting changes to my diet for the better. I’m just more of a one bite at a time to eat the elephant type of person. Small manageable changes are the only way I can make them stick.

More than a year ago I gave up pop, now I’m working on reducing my sugar intake. When I was asked to try the new natural sweetener on the Canadian market, Pure Via Stevia from Whole Earth, I decided to say yes. I don’t want to swap out sugar for chemicals, and Stevia has been touted as a popular natural replacement.

Whole Earth Sweetener Company is excited to introduce Pure Via sweeteners, naturally sourced alternatives to sugar and artificial sweeteners made from the pure extract of the stevia plant. As a replacement, spoonful for spoonful, for sugar in beverages, cooking, and baking, Pure Via can help to reduce overall calories consumed without sacrificing great taste.

I was sent a selection of the Pure Via Stevia product line to try out that included the Pure Via Packets, Pure Via Granulated, and the Pure Via Turbinado and Stevia Blend. Since Coffee is my beverage of choice most days (single, single) that’s where I tried the Pure Via First. I didn’t even notice a change in taste as I was drinking unless I thought about it and then I would say there was a slightly bitter taste, but it wasn’t unpleasant. Next I tried the Turbinado and Stevia blend and I have to admit that I preferred it. There was no difference in flavour from sugar that I could discern and with half the calories of sugar it’s a good option for those watching calories. Lastly I tried the granulated sugar in a blueberry muffin recipe. 4 out of 5 kids gobbled them up so I would call that a success. This muffin recipe is more cakey and less sweet than others that I have tried, but that could be in part that I used only white flour because it’s what I had on hand. I do however recommend using fresh blueberries to really enhance the taste.

Pure Via Stevia – Blue Berry Muffin Recipe and Review
Recipe Type: Muffin

SERVINGS Makes: 12 muffins
Ingredients
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon grated orange peel
  • 20 packets Pure Via® sweetener
  • 1 cup buttermilk (If you don’t have buttermilk put a tablespoon of vinegar or lemon juice in a cup of milk and let sit 5 minutes)
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1-1/2 cups fresh or frozen blueberries
  • Quick or Old Fashioned Oats (optional)
  • I didn’t try it this time out, but a Turbinado and Stevia Blend Streusel topping would pair perfectly with these muffins. To make the streusel use:
  • 1/4 cup Turbinado and Stevia Blend
  • 1 tbsp butter
  • 1/2 tsp cinnamon
  • 1/4 cup oats (optional)
  • Once the muffin batter is placed in the muffin cups sprinkle the streusel on top and bake as per directions above.
Instructions
  1. Preheat oven to 400° F.
  2. Line 12 muffin cups with paper baking cups.
  3. Mix together flours, baking powder, baking soda, salt , orange peel and Pure Via® sweetener in a large bowl.
  4. Stir in buttermilk, oil and eggs; mix until just moistened.
  5. Fold in blueberries.
  6. Divide batter evenly among muffin cups.
  7. Sprinkle with oats, if desired.
  8. Bake 20 to 25 minutes or until light golden brown.
  9. Cool one minute; remove from muffin cups.
  10. I didn’t try it this time out, but a Turbinado and Stevia Blend Streusel topping would pair perfectly with these muffins. To make the streusel use:
  11. /4 cup Turbinado and Stevia Blend
  12. tbsp butter
  13. /2 tsp cinnamon
  14. /4 cup oats (optional)
  15. Once the muffin batter is placed in the muffin cups sprinkle the streusel on top and bake as per directions above.
